The Iberian Secreto is composed up of layers of muscle fibres included in the lard of the loin. Well known and appreciated by chefs and consumers, it is recognized by its white streak of infiltrated fat that melts in contact with the heat providing an unique flavor and great juiciness. It is one of the tastiest cuts of pork and is usually prepared on the grill to appreciate the fullness of its flavour.
