It forms a unit with the loin and is separated in the cutting. Its characteristics, except for its size, are very similar to those of the loin. It is tasty, aromatic and will delight the most demanding palates due to its excellent texture. It is prepared grilled or roasted and gains in flavour from the charcoal grill.
